Jens Buckwheat Pancakes


This weeks social share is this scrummy recipe by Jen Heward – last year Jen cut 80% of processed foods completely from her diet, you only have to take a look at her page to see the truly incredible results of this. Jen has inspired me to make more health conscious food choices and I wouldn’t say avoid, but definitely think twice before opening a packet of processed nom noms no matter how convenient it may be at times!

As it's pancake day - Here is the recipe for Jens Buckwheat Pancakes!
1 cup buckwheat flour
2 small mashed banana 
1 cup coconut or almond milk
2 tbsp flax meal 
1 tsp aluminum free baking soda and powder 
1 tsp sea salt 
1/2 cup blueberries 
1-2 tbsp raw honey (to drizzle on top)

Steps:
1. Mix all dry ingredients in bowl
2. Mash banana until smooth (or put in food processor) 
3. Add banana and wet ingredients to dry ingredients. Mix well.
4. Heat pan or griddle (use alittle oil/coconut oil or spray if needed)
5. Fold in blueberries to batter
6. Scoop batter onto heated pan. Cook on medium heat one side for 2-3 minutes. Flip carefully. Cook another 1-2 minutes. Don’t cook to long. 
7. Layer pancakes, top with blueberries and warm honey. Enjoy!
